
The major in Sustainable Agriculture and Food Systems (SAFS) at East Texas A&M University consists primarily of online asynchronous courses. This format allows access to relevant content to students majoring in SAFS as well as those seeking online electives. The four most popular courses include Introduction to Sustainable Agriculture, Food Systems-Farm to Fork, Agroecology, and Urban Agriculture. Courses are organized into weekly modules with discussion prompts used for formative assessment. Projects of various types are used as major assessments. The objective of this presentation is to describe how some of the projects are used in one or more of these courses to engage students during the semester. Projects include introductory video, two-minute speech, farmer interview and farm profile, video summary of a case study, poster presentation, food-based and farm-based service learning, and the fabulous farm to fork food finale. Students are also encouraged to participate in virtual and face to face programs presented by cooperative extension, governmental agencies, and non-profits for additional complimentary experiential learning. This presentation will provide specific descriptions and directions related to these project as well as some of the challenges with their implementation.
