Training Undergraduate University Students in the Development of Online Educational Materials to Enhance Knowledge of Animal-Based Foods Among Students in Public and Private Schools in Puerto Rico

The Puerto Rico Goat and Sheep Educational Program Initiative (PR-GOSHEPI), University of Puerto Rico, Mayagüez (UPRM), aims to train undergraduate students in the development of instructional materials using distance education technology. Additionally, the program emphasizes educating elementary, middle, and high school students in public and private schools about the origin and characteristics of animal-based food sources. The program’s main objective is to equip UPRM undergraduate students with the skills to create and publish online educational modules (OEM) in video format. To carry out the program, nine students developed OEM focused on milk and meat production. Each video includes 12 illustrations. The process begins with the drawing and painting of each illustration, followed by the creation of the script. Once the written module is finalized, the instructional videos are produced and narrated. The first 24 months of the program, students developed six dairy production modules and eight beef production modules targeted at elementary and middle school students. The OEM include: "Dairy Goats", "Fresh Cow's Milk", "Dairy Sheep", "Milk for Ice Cream", "Piglet for Christmas", "Sheep, Caprine, Bovine, and Swine Breeds", "Small Ruminant Meat", and "Pork Meat". Six OEM on milk production were designed for K-10 to K-12 students, titled: "Milk: Our First Food", "Milk Synthesis and Mammary Gland Anatomy", "Is Milk Good for You?", "Dairy Products", "Goat Milk", and "Types of Cheeses”. Educational videos for the same audience on meat production include: "Is Meat Good for You?" "Farm to Table Meat", and "Small Ruminant Meat”. In conclusion, the creation of video-based online learning modules has proven to be an effective method for educating undergraduate students and leveraging distance learning technologies to develop high-quality educational materials.
